I love stuffing bell peppers because they turn out different every time. This is a meal that I can plan while looking at what I have in my fridge! I try to balance out a protein, added veggies, and some kind of cheese or binding agent to bring it together. So that's how I came up with these chicken parm-style stuffed bell peppers!

Until I started Weight Watchers a little over a year ago, my cooking skills were insanely limited. I didn't even know how to properly cook a steak, and I had always told myself that I "didn't like" vegetables. To be completely honest, a lot of my meals consisted of pizza that I ordered in, or an order from Taco Bell and a tall Lime-A-Rita. This makes me cringe and giggle all at once. I knew so little! 

But my major goal in joining WW, aside from losing weight and getting healthy, was learning how to eat a balanced diet. And all of a sudden, most of my go-to foods were too many points to justify eating! I needed to learn how to incorporate veggies, lower-fat foods, and lean meats into my diet. I needed to figure out how to replace my high-carb foods. And magically, veggies are really good at that! It's been pretty awesome how great of a carrier some vegetables can be. I still have a LOT to learn, but I have come a long way.

Ingredients:
2 5-oz chicken breasts
2 bell peppers, medium
1/2 white onion, diced
1 1/2 c. marinara / chunky tomato sauce
1/2 - 1 c. spinach leaves, torn
1 clove garlic
1/2 c. part-skim mozzarella, shredded
1/4 c. Asiago (or parmesan) cheese, shredded

((Serves 4))

Preheat oven to 375.

Season chicken with Tuscan seasoning and cook over medium-high heat until no longer pink.

While it is cooking, take some time to chop up the onion and cut the peppers.

Cut out pepper stems and slice them lengthwise in half. De-vein and de-seed them so you have these "bowls".

Chop up chicken into bite-sized pieces (a little smaller than pictured!).

Combine chicken, onions, marinara, spinach, and pressed garlic in a bowl and mix thoroughly to combine.

Arrange pepper halves in a glass or ceramic baking dish, preferably one where they fit tightly so they don't tip over. Sprinkle half of the mozzarella into the bottom of the peppers.

Divide filling mixture amongst the pepper halves, packing as needed. The ingredients will settle when baking.

Sprinkle remaining mozzarella and asiago cheese on top. Bake in center of oven for 15-20 minutes, or until cheese is browned.

Enjoy! This is gluten-free, has no added salt (apart from what is in the seasoning), low-carb, and thoroughly delicious. If you are following Weight Watchers, they are only 6 SP per half pepper, and probably could be less without as much cheese... but sometimes you've got to live a little!
